All the olive trees undergo cyclical pruning, organic fertilization, and spontaneous, permanent grassing.
The predominant variety in this vineyard is Sangiovese, with the exception of a small area where we grow a mass selection of Malvasia Toscana.
It's our open-air laboratory, where we experiment with typical Tuscan varieties to add complexity and new nuances to our wines.
We do not perform deep tillage to protect the soil's structure and microbial life. We do not use pesticides or herbicides; weeds in the vineyard are removed mechanically.

To maintain the vitality of our soil, we perform only two organic fertilizations: the first immediately after the harvest, the second at the beginning of spring, that is, at the beginning of the vine's vegetative awakening.
