Extra Virgin Olive Oil

Our extra virgin olive oil is a true labor of love: a small, artisanal, organic production from 500 trees of Tuscan varieties. An oil with vegetal aromas, especially of herbs and artichokes, green almonds, and slightly bitter notes, with a spicy finish, indicative of its high level of polyphenols.

The olive trees undergo cyclical pruning, organic fertilization, and permanent, spontaneous grassing.

The olives are hand-harvested, generally at the end of October, when they are slightly ripe, thus ensuring a high level of antioxidants. The olives are cold-pressed within six hours of harvest at a temperature below 27⁰C (80⁰F) and then filtered.

CARING FOR THE OLIVE GROVE

We cultivate with respect and responsibility.


The soil remains alive thanks to spontaneous ground cover, which nourishes it naturally and avoids invasive tilling.

Each tree receives annual hand pruning and targeted organic fertilisation, preserving its health and authenticity.


We don’t chase high yields; we prefer to nurture strength, balance, and fruit quality.

THE GENESIS BIRTH OF OUR EXTRA VIRGIN OLIVE OIL

Harvesting takes place by hand at the end of October, earlier than many producers.


Picking early means fewer litres, but it enhances aromas, freshness, and valuable antioxidants.


The olives are taken to the mill within eight hours, processed in small batches to maintain purity.

After defoliation, washing, and pitting, we proceed with cold pressing below 25 °C, followed by gentle extraction and filtration—each step designed to preserve freshness, vibrancy, and nutritional value.

The Result

A robust, complex organic extra virgin olive oil, typically with green, grassy notes of fresh herbs and artichoke.

Naturally rich in antioxidants due to its high level of polyphenols, it’s not only a precious condiment but also a true ally of well-being, a “fruit juice” untouched by refining, preservatives, or additives.

To preserve its fragrance and freshness, we bottle it in dark glass, protecting it from light.
