Our Products

Philosophy
Our values guide our work, our partnerships, our decisions and investments.

Family management: being a small estate allows us, the owners, to be involved at all levels and to strictly manage the work that takes place in it, from agriculture to hospitality. For us the goal is quality and sustainability.

Respect: for people, for the land and the environment. Our collaborators and customers are fundamental to our business; without them we could not continue this adventure. Working collaboratively strengthens our work. Alone we can go far, but together we can go further.

Authenticity. We want to offer not only products we love, but also products that reflect the land, made with care and attention.

Sustainability. A standard for conscious and respectful choices and investments, because we are aware of our responsibility to protect and perpetuate these magical places.

Our philosophy translates every day into concrete actions: we have chosen and invested in renewable energy to produce electricity; we follow the principles of organic farming and try our best – when possible – to choose recyclable packaging that is easy to dispose of. We take care of our forest to preserve biodiversity and maintain ecosystems.

Extra Virgin Olive Oil
Our extra virgin oil is an act of love, a small artisanal and organic production from 500 trees of only Tuscan varieties. An Extra Virgin with hints and flavors of vegetable notes (grass, artichokes) and green almonds, slightly bitter notes with a final piquant flicker that indicates its high level of polyphenols.

The nurturing of olive trees followed a cyclical pruning, organic fertilization and benefit from spontaneous grassing and cover crops. The manual harvesting of the olives is generally carried out at the end of October, in an early stage of maturation to ensure a high level of antioxidants. The cold pressing takes place within 6 hours of harvest (temperature below 27⁰C) and subsequent filtration. All steps that guarantee the sensory quality and nutritional characteristics of our EVOO.

We are very proud of our organic Extra Virgin Olive Oil, it is different every year, and we invite you to try it on your visit.

Our wines
At Ferrale, we make wines that reflect the land and the vintage they experienced, but ultimately wines we enjoy and are proud to share.

The management of the vineyard is organic and strictly follows the needs of the vines in order to bring healthy and perfectly ripe grapes to the cellar.

Harvesting usually takes place towards the end of summer, depending on the wine, and is done at different times according to the needs of each wine. Grapes are harvested by hand, picked in boxes, and immediately transported to the cellar, after which each wine will follow its own aging process.

Vittoria, A Tuscan IGT, Our Rosato Toscano
Our first label, named as a tribute to Aunt Vittoria (the last of the Soderi family to own the farm) to her work on the estate and to the memories of her youth spent at Ferrale. Fragrant, fresh and elegant with acidulous notes that make it exuberant and vibrant, just like Aunt Vittoria, a perfect companion for spring and summer days.

To produce this superior Rosato, our Sangiovese is harvested earlier to preserve acidic notes, flavor and aromas. Early morning picking of the grapes guarantee its freshness, it is vinified in white, with Sangiovese as protagonist, stays in steel containers, and it’s presented in a clear bottle to show off its beautiful color, sealed with a fully recyclable technical cap.

Ferrale, Our Chianti Classico
Born from the two vineyards, it reflects the land and the rich heritage of the place and region, the hills and their surroundings.

Sangiovese is the first lady of this wine, sometimes accompanied by Canaiolo, that vinifies in steel and cement vats, ages in second passage barriques of French oak for at least eight months, and once is bottled, continues the aging process for another six months before being released on the market.
Characterized by a vibrant ruby color, tending towards garnet, it has a deeply vinous aroma with high notes of fruit – especially cherry -, it is dry and savory flavor that evolves to soft and velvety over time.

It is presented in a dark bottle, sealed with natural cork.

Ritorno, A Tuscan Red IGT
Ritorno (return in Italian) is our first red wine, it represents our way back to the family roots. This wine is created when our young Chianti Classico leaves the steel and cement vats; the result is a light red wine that is easy to drink, that reflects the land, but also reflects us; simple and uncomplicated.

This is a young wine to be drunk any time, on any occasion. It is made from our Sangiovese and Canaiolo grapes, fresh, fruity and floral, with high note of cherry, perfect for an “aperitivo”, light lunch or dinners. It is presented in a dark bottle sealed with a completely recyclable cap.
